An Insight About Filipino Food by Daisy Rockwell

Philippine is one of the largest archipelago in the world, it is surrounded by seas and major ocean of the world and compose of 7,107 island and the total length of Philippines coastline is 36,289 kilometers, third longest in the world after Canada and Indonesia. Because of the vast area of seas and ocean that surrounded Philippines it was blessed by different natural sea resources primarily seafood’s. Seafood’s is one the most popular for food Filipino aside from pork, chicken, beef and vegetable for the reason that fresh seafood’s is always available in local market. Majority of Philippines fish supply usually caught in seas by commercial fishing but lots of supply also came from fish culturing or farming. Fish farming become a popular business or livelihood for some Filipino, the business started in late seventies and since then the business emerged as one of biggest contributory for a lots of Filipino economically. Bangus, Tilapia, African Catfish, Tiger prawn, Mud crab is the most popular among them and they usually farm in Taal Lake, Pangasinan, Laguna de bay, Bulacan and other places in the Philippines. In Metro Manila, Navotas fish port is a well known drop point of seafood’s product caught directly in the seas, lots of fish or seafood’s retailer in local market usually get their supply in various fish port scattered in the country. You could usually find different types of fishes there and among them are Bangus, Red snapper, Grouper, Tuna, Sword fish, sting ray, mackerel, different kind of clams and a lot more.
Seafood’s is always a part of Filipino day to day, it could be cook stew, fried or eaten fresh or raw. Majority of Filipino special recipe for fish is primarily Chinese in origin such as sweet and sour fish. Escabeche, fish tofu on oyster sauce, steam fish, Fish totso on black beans and lots more. Ground pork lumpiang shanghai is a popular pork recipe in the Philippines, it is a ground pork mixed with grated carrots, onion, celery and wrap from lumpia wrapper then fry, but now a days you could usually find lumpiang shanghai made of mackerel and bangus sold commercially in local market, I’ve just taste some and it is so delicious and more healthier. But Filipino also has its own recipe for cooking fish, Rellenong bangus is one of my favorite and it is usually prepared during special occasion, sinigang, pinangat, inihaw, paksiw , sinigang na isda is another popular day to day Filipino Fish recipe. I almost forgot seaweeds, one of my favorite salads and I usually prepare seaweed with tomato, ginger, and onion as a side dish for fried fish.
A lot of seafood’s has become a day to day food for Filipino due to the reason of availability and affordability. Mackerel has become a political slogan for electoral campaign during 1986 Philippine presidential election as it became a national food for Filipino people and its price increase reflects the poor condition for a lots Filipino. Presently, Philippine fish production is decreasing drastically because of illegal fishing; massive fish kill due to ecological imbalance. I hope that proper government agency can find ways to stop those incident and correct whatever mistakes has being done as seafood is a major part of Filipino food.

Daisy Bates (1914-1999) is renowned as the mentor of the Little Rock Nine, the first African Americans to attend Central High School in Little Rock, Arkansas. For guiding the Nine through one of the most tumultuous civil rights crises of the 1950s, she was selected as Woman of the Year in Education by the Associated Press in 1957 and was the only woman invited to speak at the Lincoln Memorial ceremony in the March on Washington in 1963. But her importance as a historical figure has been overlooked by scholars of the civil rights movement. Daisy Bates: Civil Rights Crusader from Arkansas chronicles her life and political advocacy before, during, and well after the Central High School crisis. An orphan from the Arkansas mill town of Huttig, she eventually rose to the zenith of civil rights action. In 1952, she was elected president of the NAACP in Arkansas and traveled the country speaking on political issues. During the 1960s, she worked as a field organizer for presidents John F. Kennedy and Lyndon B. Johnson to get out the black vote. Even after a series of strokes, she continued to orchestrate self-help and economic initiatives in Arkansas. Using interviews, archival records, contemporary news-paper accounts, and other materials, author Grif Stockley reconstructs Bates's life and career, revealing her to be a complex, contrary leader of the civil rights movement. Ultimately, Daisy Bates paints a vivid portrait of an ardent, overlooked advocate of social justice. Grif Stockley is a staff attorney of the American Civil Liberties Union of Arkansas. He is the author of several books, including Blood in Their Eyes: The Elaine Race Massacres of 1919 , Blind Judgment , Probable Cause , and Expert Testimony . He lives in Little Rock, Arkansas.
